We couldn’t give you an article about the history of sausages without sharing a recipe for one of our favourite sausage dishes, it just wouldn’t be fair.
Bangers and mash is a classic British dish that has been enjoyed for centuries. This comfort food is simple and quick to make, yet it is incredibly flavorful and fun to eat.
In this recipe, chicken sausages are cooked in butter until they’re golden brown and served with creamy mashed potatoes that are coated with onions cooked in gravy for a rich and fragrant flavour. It’s the perfect meal for a cosy night at home with the kids.

What you will need:
– 2 large onions, chopped finely
– 4 tablespoons of butter
– 2 cups of chicken stock
– 1 tablespoon of Worcestershire sauce
– Salt and black pepper to taste
– 3 tablespoons of all-purpose flour
– 1kg of potatoes, peeled and cut into chunks
For the mashed potatoes:
– 2 tablespoons of butter
– ¼ cup warm milk (or more to reach desired consistency)
Step 1
1. Preheat the oven to 375°F. Arrange Chicken sausages on a baking sheet and bake for 20 minutes until golden brown. Remove from the oven and set aside.
2. In a large pan over medium heat, melt the butter and add in the chopped onions. Cook until the onions are softened for approximately 5 minutes. Add the chicken stock, Worcestershire sauce, salt and pepper to the pan and bring to a boil. Lower the heat and simmer for around 8 minutes until the stock has reduced. Stir the mix occasionally to ensure an even cook.
3. In a small bowl whisk together the flour with equal parts water (about 1 tablespoon each) until a smooth paste is formed. Slowly pour this into the onion mixture while stirring continuously to avoid any lumps and until the mixture thickens; add your sausages and cook it for an additional 3 minutes until bubbling then remove the pan from the heat.
4. Fill a pot with cold water and add the potatoes; bring to a boil over high heat and then lower the heat to medium so that it simmers for 10 minutes until the potatoes are tender enough to be pierced with a fork with ease. Drain the potatoes in a colander and then return them back to the pot; add the butter and warm milk, and then mash the potatoes until it forms a smooth and creamy texture; season the mash with salt and pepper to your desired taste.
5. Finally, spoon the mashed potatoes onto individual plates and then top them with your chicken sausages that were cooked in the onion gravy; garnish your meal with fresh parsley or chives if you like them and then serve.
