Recipe: Beef Chorizo Chili

Ingredients:

  • 500g of our finest Beef Chorizo, casing removed and crumbled
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 2 cans (400g each) of diced tomatoes
  • 1 can (400g) of kidney beans, rinsed and drained
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh coriander, for garnish
  • Grated cheese, for garnish (optional)

Instructions:

  1. In a large pot, cook the Beef Chorizo over medium heat until it starts to brown slightly, breaking it up with a spoon as it cooks to ensure the meat is evenly cooked throughout.
  2. Add the onion, garlic, and red bell pepper and cook until it softens.
  3. Stir in the diced tomatoes, kidney beans, and spices, bringing the mixture to a gentle simmer. Let it cook uncovered for 25-30 minutes, but stir it occasionally.
  4. Season the chilli with salt and pepper to taste. This is your opportunity to experiment with any additional herbs and spices you might want to add for your desired flavour.
  5. Serve hot, garnished with fresh coriander (and grated cheese if desired).
