Recipe: Beef Chorizo Chili
Ingredients:
- 500g of our finest Beef Chorizo, casing removed and crumbled
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, chopped
- 2 cans (400g each) of diced tomatoes
- 1 can (400g) of kidney beans, rinsed and drained
- 2 tsp ground cumin
- 2 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and freshly ground black pepper to taste
- Fresh coriander, for garnish
- Grated cheese, for garnish (optional)
Instructions:
- In a large pot, cook the Beef Chorizo over medium heat until it starts to brown slightly, breaking it up with a spoon as it cooks to ensure the meat is evenly cooked throughout.
- Add the onion, garlic, and red bell pepper and cook until it softens.
- Stir in the diced tomatoes, kidney beans, and spices, bringing the mixture to a gentle simmer. Let it cook uncovered for 25-30 minutes, but stir it occasionally.
- Season the chilli with salt and pepper to taste. This is your opportunity to experiment with any additional herbs and spices you might want to add for your desired flavour.
- Serve hot, garnished with fresh coriander (and grated cheese if desired).
