Ingredients:

For the Dough:

2 cups all-purpose flour

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cut into cubes

1 large egg

1/4 cup ice water

For the Filling:

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 pound ground beef

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon chilli powder (adjust to taste)

Salt and pepper to taste

1/4 cup chopped fresh cilantro (optional)

1/4 cup chopped green olives (optional)

For Assembly:

1 egg, beaten (for egg wash)

Optional: Sesame seeds or poppy seeds for sprinkling

Instructions:

To prepare the dough:

  1. In a large mixing bowl, combine the flour and salt. Add the cubed butter and use your fingertips or a pastry cutter to blend the butter into the flour until it resembles coarse crumbs.
  1. In a small bowl, beat the egg, then add it to the flour mixture. Gradually add the ice water, a little at a time, mixing until the dough comes together.
