From Russia with love
While hugely popular in the UK and beyond, beef stroganoff is believed to originate from Russia in the early 1900s, although, as you would imagine, it was called Stroganov.
It is widely believed to be named after Count Pavel Stroganov, a wealthy Russian nobleman and diplomat. The Stroganov family was well known in Russian aristocratic circles, and they were patrons of the arts and sciences. Some suggest that the dish was created by the family's French chef, which was common in aristocratic households at the time, blending Russian ingredients with French culinary techniques.
The earliest known recipe for Beef Stroganoff appeared in a book titled A Gift to Young Housewives" by Elena Molokhovets in 1871. This version consisted of lightly floured beef cubes sautéed and served with a sauce made of mustard and bouillon, finished with sour cream, without the onions and mushrooms commonly seen today. This recipe was simpler than modern versions, reflecting the Russian affinity for sour cream-based sauces, which was a key feature of their cuisine.
French Influence
The dish is believed to have been created by Stroganov’s French chef, although there is no record of his name and no one has come forward to take credit for the wonderful creation.
In the 19th century, Russian aristocrats had a strong cultural connection with France, often employing French chefs to cook in their households. French cuisine influenced the creation of Beef Stroganoff, particularly in its preparation techniques (like sautéing the beef). The sauce made with sour cream also followed French practices of creating rich, creamy dishes, which heavily influenced Russian cuisine.
Stroganoff’s passport to the world
Stroganoff became popular in Russia and the Soviet Union, although it is not quite clear what the catalyst was seeing as the chef believed to have created the dish worked exclusively for the Stroganov family, at least at the time.
The Stroganov family, like many Russian aristocrats, lost their wealth and power during the Russian revolution in 1917, and many emigrated to Europe and the United States. They took with them not only their physical possessions, but their culinary traditions too.
This was the catalyst that saw stroganoff quickly spread to other parts of the world, where the dish evolved to suit the culinary tastes of each region that it touched.
In the United States, the dish became particularly popular in the 1950s and 60s, where it was often made with canned mushroom soup or cream sauces, reflecting the era's convenience-based cooking.
In Brazil, it evolved into a dish made with strips of beef, chicken, or shrimp, and the sauce is often a mix of heavy cream and tomato sauce.
In Japan, Beef Stroganoff is a popular "yoshoku" (Western-style) dish, often served over rice.

Our recipe
This simple yet delicious recipe for Beef Stroganoff serves 4 people and makes a wonderful dish to share with friends and guests.
Ingredients:
1 lb (450g) beef sirloin or fillet, sliced into thin strips
1 medium onion, finely chopped
2 cloves garlic, minced
8 oz (225g) mushrooms, sliced
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
1 cup (240ml) sour cream
2 tbsp olive oil or butter (for sautéing)
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Egg noodles or rice (for serving)
Instructions :
Prepare the beef:
Season the beef strips with salt and pepper. Set aside for 30 minutes to an hour for the best result.
You can get away with 15 minutes too, if you’re in a hurry, but more time lets the meat absorb the flavour and it draws out the moisture from the meat, which is great for cooking.
Sauté the beef:
- Heat 1 tablespoon of olive oil or butter in a large pan over medium-high heat
- Sear the beef strips for 1–2 minutes per side until browned but not fully cooked through.
- Remove from the pan and set aside.
Cook the onions and mushrooms:
- In the same pan, add the remaining oil or butter. Sauté the onions for 3–4 minutes until they soften.
- Add the garlic and cook for another minute
- Add the mushrooms and cook for 5–6 minutes until golden and tender
Make the sauce:
- Stir in the Dijon mustard, Worcestershire sauce, and beef stock.
- Bring the mixture to a simmer and let it reduce slightly, about 5 minutes.
Add the beef and sour cream:
- Lower the heat and return the beef strips to the pan, along with any juices.
- Stir in the sour cream and let everything cook gently for another 3–4 minutes until the beef is fully cooked and the sauce thickens. Be careful not to let it boil, as it could cause the sour cream to curdle.
Serve
- Taste and adjust seasoning with more salt and pepper if needed.
- Serve hot over egg noodles or rice, and garnish with chopped parsley for a fresh finish.
